Gently eggy recipes? Son has outgrown his egg allergy (hurrah!) & I'm looking for recipes to get him started


Thanks! Nothing too eggy - I tried omelette and he didn't like it at all

thanks everyone for the ideas - he had several food allergies so we have been really careful and he has just been skin prick tested again which gave him the all clear.
The jam ommlette takes me back to my own childhood and my mums making 'eggily googiles' which put me off eggs AND jam!

French Toast
i use french bread sliced thick or texas toast loaf bread
mix 2 eggs, 1 c. milk, 3T. sugar, and 2T. cinnamon, 1 T vanilla
and fry in a little oil or butter, you just want to have enough oil to coat pan, even a spray is better than too much oil


Easy fritata:
Peel enough potatoes for two
grate in processor or by hand
In fry pan heat 2 T. oil (what every you have is fine)
fry potatoes like a big pancake on both sides
Add enough eggs for two (whipped)
Add any topping you guys like (green pepper, onion, spinach, tomato, You get the idea)
Cook until egg is almost set, top with cheese (again what ever you like cheddar, Swiss mozzarella)
Finish cooking till cheese has melted

Place a few pieces of the exra thin ham in a ramikin so there are no gaps( in a cup shape) sprikle some gated cheese onto the ham, break one egg onto the cheese and sprinkle some more cheese on topif you like ham you can shred a slice a put this on top... place into a med -hot oven and bake until the ham starts to go crispy round the edges.
I usually have to put it in the microwave for a minute as the egg is sometimes a bit 'snotty' so i finish it with a zap of microwaves.. when you are satisfied that the egg is cooked remove from rthe ramakin and place om a slice of toast. it should be firm all the way thru and cut up like a quiche... try it ...... it is a simple and tasty snack for any time of the day and there is only one pot to wash up....


variations can include mushrooms, tomatoes, cooked sausage.....

My grand daughter loved smoked fish pie but very little else,adding chopped up egg was one of the tricks to get her to have a more varied diet.Adding cheese,mashed potatoes,carrots,peas,finely chopped onion,mustard sauce,chili,all sorts of tastes could be introduced slowly until now she will eat anything and anything,curries,boiled egg with toast soldiers,chips dipped in runny poached eggs,the lot.Eggs are one of those things that can be added to almost anything,there's even a recipe for jam omelette's.Just Google recipes+eggs.

Start with pancakes, waffles, french toast. Then cookies, cakes, brownies.
When you want even more egg type recipes for him go with fried rice that has some chunks of scrambled egg in it. Also egg drop soup. (Sounds like a trip to a Chinese Restaurant)
From there I would just let him tell you how much he wants to handle.
Have him help you cook some of these things. I found that when kids help they eat better.
By the way I am assuming that your son is young.
When he is ready for real egg stuff go with egg salad sandwich and deviled eggs

I would try to start with scrambled eggs-

another suggestion is soft boiled eggs- bring them to a boil then turn them down to a simmer for 3 min. Break open and served over cubed buttered bread. Add salt and pepper to taste. I liked this egg the best when I was a kid.

Out of interest, how did You find out He'd outgrown the allergy? Would You slip bits of egg into His food to see how He'd react? There's a slight chance He doesn't like the taste of eggs. Congrats anyway.

My daughter hates scrambled eggs or any egg thats cooked after you scramble it. She loves runny eggs and boiled eggs. Not the yolk just the whites....plus they jiggle and kids seem to get a kick out of it.

Well how old is he....have you been advised to start him on eggs now....what about french toast or pancakes.
