At what point does lactose intolerance become a full-blown diary allergy

I've been suspicious that I was lactose intolerant for a while now, but it was one of those things that came and went. Sometimes just a slice of cheese would irritate my stomach to the point where I was doubled over in pain, and sometimes I could eat dairy all day without a problem. (The pain followed dairy products only - just not all the time.)
Now, for the last couple weeks, I've been to the point where I can't have a glass of milk, a cup of ice cream, a coffee with cream in it, or even 1/3 of a cup of milk in my oatmeal in the morning without regretting it.
It is possible to gradually become lactose intolerant? And at what point would it be considered a full-blown allergy?
And, dear god, what products do you recommend to replace the Ranch dressing, sour cream, cheese, and milk that I love so much???

Lactore intolerance doesn't turn into a milk allergy. They are unrelated medical problems.

You can try soy milk products. Sometimes lactaid pills/milk works too.

there are soy products you could try. also some of the specialty foodstores have dairy free products. try trader joe's in my area that is the biggie for specialty foods. but heck even jewel has organic and specialty sections that have become quite extensive. good luck.
