How do i deal with my adult child with bipolar disorder?

If you let him sink or swim, he'll swim. If you don't, he'll never bother to get right.
You need to give more info. Are you responsible for your child?
First and foremost when you say "deal" and "adult child" in the same sentence I get offended. No mean to offend. But I guess I take it personally for I am an adult who is the child of someone and have been diagnosed with bipolarity and manic nature. Even so, what do you mean by deal?

Are they not working, getting out of bed, taking care of their responsibilities, etc?

Need clarification to answer question more thoroughly and maybe help you out.
First, Get as much Literature you can on Bi-Polar disorders and Second, Have Patience and give as much Love and Support that you can to them. I have a few friends with this and it can be QUITE Frustrating at times. Good-Luck and Take-Care.
