Chicken breast reduction?


Does anyone else have this problem and have they found a solution?

For the last few year I have been buying boned chicken thighs when I need to chop up chicken for curry or pasta. It's less expensive and has more flavor than breasts. However, I sometimes buy breasts when they are on sale.

Here's the problem: I chop them and through them in the pan to saute, only it ends up poached because all the water that is released when heated. So I scoop it out and reduce the liquid, add the chicken, then more water is released.

Do I have to resort to baking chicken breasts instead of sauteing them?

Yes try baking the whole breast because juices in the chicken will run when cut into sections once cooked Just use the pan on the stove the same way you would do a saute You might try a little salt & pepper while baking/sauteing also That should bring out the flavor while keeping in the juices while cooking Salt is also an excellent tenderizer
