Which cheeses are lower in cholesterol and/or fat?


My fiance and I love fine cheeses (both for general tastings and for cooking). I was planning on baking some portabello caps stuffed with toasted walnuts, oyster mushrooms, spinach and brie tonight (maybe some tomato as well) but brie is a little higher in cholestrol than I would like. Can anyone tell me which cheeses have (relatively) less cholesterol and/or fat (no "low-fat velveeta" please)?

Hard cheeses such as Permesan, Asiago and Pecorino romano are typically lower in fat.
The lowest fat cheese is cottage cheese, but it has not been aged.
Keep in mind that the higher the fat of the cheese, the more it will melt with heat, So lower fat cheeses are not very good at melting.
