Do you think there's a lack of honest-to-life fiction dealing with characters with eating disorders?

Yes. There seem to be more tabloid stories accusing eating disorders than novels that approach the issue. I remember watching Full House as a child and seeing an episode where one of the girls dieted and was working out like crazy on an exercise bike and there was some feel-good lesson learned, but a lot of people fall into the behavioral pattern and find it really hard to break. I still struggle myself with the problem that started nearly a decade ago.
