1. Large proteins - which is the reason the body produces so many proteases.

2. Stomach. Specifically, the stomach produces HCl and pepsinogen, which is converted to the active protease pepsin, which mixes with the food, and the mixture is combined by contractions of the stomach into acid chyme.

3. The rectum does not stimulate or inhibit gastric secretions.

4. Bile is not required for the digestion of fat - lipase digests it. However, bile emulsifies fat, and makes it much easier for the lipase to break down the fat.

5 and 6. CCK is produced by the intestine, and released in the duodenum, and causes the release of bile from the gall bladder and digestive enzymes from the pancreas. While bile salts are produced in the liver, they are stored in the gall bladder. So far as I can discover, it is R (+)-alpha-lipoic acid (RLA) that stimulates the liver to produce bile salts, not one of the regular digestive enzymes.

7. Again, the bile is stored in the gall bladder.
