Do vegetables lose nutrition when..?


My mom makes a really good vegetable soup with carrots, cabbage, onions and green beans. She cooks it for about 4-5 hours in a pot, or sometimes a crock pot. After cooking for such a long time, would the veggies lose their nutritional value? Also, since she makes so much, she freezes about half of it. How nutritional would the vegetables be after that?

No, cooking it doesn't make it lose the nutrition.

If you microwave it, most of the nutrition does go away.
So don't use microwaves.

And freezing it right after its cooked isn't good.
So just put in those glad resealable things and put it in the fridge.

Some vegetables lose a little bit of nutritional value, others actually gain some. However, if you liked cooked vegetables, then by all means eat them. They are still incredibly good for you.
