Does anyone know how exactly a mood stabililzer such as seroquel works to treat bipolar and schizophrenia?

Nope. As far as bipolar disorder and schizophrenia are concerned, if your read the PI (Patient Information) sheets for any of the anticonvulsant or antipsychotic mood stabilisers, not just Seroquel, they will state that the method of action is unknown.

There's a reasonably informed discussion group on http://www.crazyboards.org that sometimes touches on this.
